Breakfast of Champions: Fuelling to Win!

Blueliner’s Maple Chicken Patties!

Let’s dive into a breakfast recipe that’s set to become a household favorite: the “Blueliner Maple Chicken Patties” most often levelled-up into breakfast sandwiches! This recipeis part of my Power Plays on the Plate ebook made in collaboration with my friends and partners Jason Strudwick and Alberta Chicken Producers, featuring a collection of recipes designed to give you the edge, just like our Oilers on the ice.

Blueliner’s Maple-Chicken Patties

With serious skills on both the savoury and the sweet side of breakfast, these protein-packed chicken patties are the two-way player everyone needs on their breakfast roster.

Ingredients

  • 1 lb. extra lean ground chicken 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1/2 tsp cinnamon
  • 1 Tbsp pure maple syrup Salt and pepper to taste
  • 1⁄2 cup blueberries (optional)
  • 1 Tbsp oil

Optional Extras: (if making sandwiches)

  • 8 English muffins
  • 8 slices marble cheddar
  • 2 roma tomatoes, sliced
  • 8 pieces of butter lettuce

Directions

  1. In a large bowl, mix together ground chicken and all ingredients except blueberries and oil. 2.When mixture is well combined, gently fold in blueberries, if adding.
  2. Using clean, damp hands form mixture into
    patties, using about 1/3 cup per patty. 4.Preheat a non-stick pan to med-high. Add oil.
  3. Cook patties about 5 minutes per side, until fully cooked.
  4. Enjoy to-go on a toasted English muffin with cheese and veggies OR with roasted potatoes and fruit on the side.
  5. Store leftovers in the refrigerator for up to 5 days.

Dietitian Tip:

  • Double batch and freeze cooked patties for a quick reheat-and-go option on busy mornings.

This recipe not only tastes great but also provides the protein and nutrients you need to start your day strong.
