A few weeks ago I teased something here on the blog. Take It Outside

Ten recipes. Four categories — salads and bowls, bakes and boats, wraps and tacos, and from the grill. Every single one built around fresh locally-raised Alberta chicken, road-tested by my family through many Alberta summers, and paired with my Dietitian Tips so you know exactly what you are feeding the people you love and why it matters.

The recipe that kicked it all off

Earlier this month, I got to share one of these recipes live on CTV Your Morning Edmonton. We made the Grilled Cajun Chicken Sandwich — a toasted brioche bun, homemade Cajun spice, fresh Alberta chicken breast, melted cheese, and a lemon Dijon sauce that ties the whole thing together — and the response was everything I hoped for.

People wanted to make it that night. That is the whole point.

It is the kind of recipe that feels like a real event on a summer evening, and the kind of thing that packs into a container the next day and becomes the best lunch of the week. The Cajun spice blend takes two minutes to mix and keeps in a jar in your spice drawer all summer. The sauce doubles as a salad dressing. The chicken is done in 12 minutes on the grill.

EMILY’S DIETITIAN TIPS

Homemade Cajun spice gives you full control over sodium and heat. It also makes a lovely gift — fill a small mason jar, add a handwritten label, and bring it to whoever is hosting the next backyard dinner.

Chicken breast delivers over 40 grams of protein per sandwich in this recipe. After a workout, a long shift, or three hours running kids around — this is a meal that actually refuels you.

The lemon Dijon sauce doubles as a salad dressing and a vegetable dip. Make more than you need and keep it in the fridge all week. It makes everything taste more intentional.

Pack the cooked chicken separately and assemble on-site — at the park, the ball diamond, the lake. This sandwich travels beautifully and tastes just as good cold.
